Strawberry Watermelon Soup with Cashew Creme Base

Ingredients
- 1/4 cup unsalted cashews
- 4 cups seedless watermelon, diced
- 2 cups sliced strawberries
- Up to 2 teaspoons maple syrup (to sweeten, if necessary)
- 1–1 ½ teaspoons balsamic vinegar
- Fresh ground black pepper to taste
Instructions
- Cover cashews with water and allow to soak and soften for at least one hour (up to 8 hours is O.K.), then drain and rinse.
- Place rinsed cashews in a blender with 1 cup of the watermelon, then blend until very smooth. Add and blend the remaining ingredients.
- Add 1 tablespoon fresh mint and/or tarragon (minced)
- Ladle into bowls, then garnish with thin strawberry slices and additional mint or tarragon leaves. Can be prepared and chilled a few hours before serving.
