Ingredients
- 1 cup onions, small dice
- 1 cup carrots, small dice
- ½ cup celery, small dice
- 1 teaspoon pure olive oil
- ½ teaspoon toasted sesame oil
- 1 teaspoon garlic, minced
- 2½ cups mushrooms, coarsely chopped
- 8 cups vegetable stock
- 1 3/4 cups cooked white beans, low sodium
- 1 tablespoon coconut aminos
- ½ cup pearled barley
- ½ teaspoon prepared mustard
- black pepper, pinch
- 2 tablespoons fresh parsley, chopped
- 1or 2 bay leaves
- 1 tablespoon Sherry wine (optional)
Instructions
- Sauté onions, carrots, and celery in olive and sesame oils for five minutes over medium heat.
- Add garlic and sauté for five minutes. Add mushrooms and sauté for five minutes.
- Add remaining ingredients and bring just to a boil then simmer for about one hour.
