Sautéed scallions have a depth of flavor that elevates everything from stir fry to chili.

Ingredients
- 24–30 whole scallions with root end removed and cut into 2” lengths
- Black pepper
- Extra virgin olive oil (to coat blanched scallions)
- 1 tablespoon garlic, chopped
- Fresh lemon juice
Instructions
- Blanche scallions in boiling water
- Drain, cool, pat dry then toss scallions with pepper, extra virgin olive oil, lemon juice, and garlic and sauté over medium heat until lightly crisped.
